Ingredients: - 100g French beans
- 225g couscous
- 200g carrots, peeled, halved and quartered and cut into 5cm lengths
- 1 teaspoon cumin seeds
- 75g canned chickpeas, drained
- 50g sultanas
- 2 tablespoons chopped fresh coriander
- 1 garlic clove, skinned and crushed
- 1 small onion, peeled and finely chopped
- Juice of 1 lemon
- 1 red pepper, deseeded and roughly chopped
- Salt and freshly ground black pepper
Method: - Using a pasta insert in a pan of boiling water, blanch the French beans for 2 minutes. Drain and rinse with cold water. Cut the beans in half.
- Put the couscous into a large bowl and add 600ml of cold water. Leave to soak for about 20minutes or until all the liquid has been absorbed.
- Mix all the remaining ingredients, together with the French beans into the couscous. Season generously with salt and pepper.
- Spoon into a large salad bowl. Delicious served with grilled or barbecued lamb.
