Moroccan Couscous Salad

Ingredients:

  • 100g French beans
  • 225g couscous
  • 200g carrots, peeled, halved and quartered and cut into 5cm lengths
  • 1 teaspoon cumin seeds
  • 75g canned chickpeas, drained
  • 50g sultanas
  • 2 tablespoons chopped fresh coriander
  • 1 garlic clove, skinned and crushed
  • 1 small onion, peeled and finely chopped
  • Juice of 1 lemon
  • 1 red pepper, deseeded and roughly chopped
  • Salt and freshly ground black pepper

Method:

  1. Using a pasta insert in a pan of boiling water, blanch the French beans for 2 minutes. Drain and rinse with cold water. Cut the beans in half.
  2. Put the couscous into a large bowl and add 600ml of cold water. Leave to soak for about 20minutes or until all the liquid has been absorbed.
  3. Mix all the remaining ingredients, together with the French beans into the couscous. Season generously with salt and pepper.
  4. Spoon into a large salad bowl. Delicious served with grilled or barbecued lamb.

    Serves 4-6
