Vegetarian Couscous Salad
Vegetarian Couscous Salad

Ingredients:

  • 300g couscous
  • 425g can black beans, drained and rinsed.
  • 2 tablespoons chopped fresh coriander
  • 2 tablespoons chopped fresh mint
  • 300g can sweetcorn niblets, drained
  • 2 small red onions, peeled and finely chopped
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 red pepper, deseeded and roughly chopped
  • 1 green pepper, deseeded and roughly chopped
  • Salt and freshly ground black pepper

To obtain best results and to save time, use a mezzaluna to prepare the chopped herbs.

Method:

  1. Put the couscous into a large bowl and add 900ml of cold water.
  2. Leave to soak for about 20minutes or until all the liquid has been absorbed.
  3. Mix all the remaining ingredients together in a large bowl.
  4. Add the couscous and mix well.
  5. Season generously.
  6. Spoon into a large salad bowl.

Serves 8-10 as a side salad
