| Vegetarian Couscous Salad |

Ingredients: - 300g couscous
- 425g can black beans, drained and rinsed.
- 2 tablespoons chopped fresh coriander
- 2 tablespoons chopped fresh mint
- 300g can sweetcorn niblets, drained
- 2 small red onions, peeled and finely chopped
- Juice of 1 lemon
- 3 tablespoons olive oil
- 1 red pepper, deseeded and roughly chopped
- 1 green pepper, deseeded and roughly chopped
- Salt and freshly ground black pepper
To obtain best results and to save time, use a mezzaluna to prepare the chopped herbs. Method: - Put the couscous into a large bowl and add 900ml of cold water.
- Leave to soak for about 20minutes or until all the liquid has been absorbed.
- Mix all the remaining ingredients together in a large bowl.
- Add the couscous and mix well.
- Season generously.
- Spoon into a large salad bowl.
Serves 8-10 as a side salad |
