Oriental Style Beef Salad
Oriental Style Beef Salad

Ingredients:

  • 1 fillet steak, weighing about 125g
  • About 5 tablespoons olive oil
  • Freshly ground black pepper
  • Juice of 1 lime
  • A pinch of ground ginger
  • 100g mixed salad leaves
  • Half a red pepper, deseeded and cut into thin strips
  • 3 spring onions, trimmed and thinly sliced
  • 1 large carrot, peeled and cut into julienne strips
  • 25g fresh coriander leaves

Method:

  1. Brush the steak all over with some olive oil and season with pepper.
  2. Heat a griddle pan. Add the steak and cook for about 5 minutes on each side. (Slightly less for rare.)
  3. Remove the steak from the pan and allow to relax for a few minutes before cutting into thin strips.
  4. To make the dressing, place the lime juice, 4 tablespoons olive oil, and the ginger in a bowl, with a little black pepper. Using a hand wand blender, blend until emulsified.
  5. In a large salad bowl, toss together the salad leaves, red pepper, spring onion, carrot and coriander. Add the beef strips and pour over the dressing, tossing lightly to mix.

    Serves 2
