| Oriental Style Beef Salad |

Ingredients: - 1 fillet steak, weighing about 125g
- About 5 tablespoons olive oil
- Freshly ground black pepper
- Juice of 1 lime
- A pinch of ground ginger
- 100g mixed salad leaves
- Half a red pepper, deseeded and cut into thin strips
- 3 spring onions, trimmed and thinly sliced
- 1 large carrot, peeled and cut into julienne strips
- 25g fresh coriander leaves
Method: - Brush the steak all over with some olive oil and season with pepper.
- Heat a griddle pan. Add the steak and cook for about 5 minutes on each side. (Slightly less for rare.)
- Remove the steak from the pan and allow to relax for a few minutes before cutting into thin strips.
- To make the dressing, place the lime juice, 4 tablespoons olive oil, and the ginger in a bowl, with a little black pepper. Using a hand wand blender, blend until emulsified.
- In a large salad bowl, toss together the salad leaves, red pepper, spring onion, carrot and coriander. Add the beef strips and pour over the dressing, tossing lightly to mix.
