| Tomato Salsa Topped Tournedos |

Ingredients: For the salsa To obtain best results and to save time use a mini-chopper to prepare the ingredients - 6 ripe tomatoes, peeled and finely chopped
- 2 shallots, peeled and finely chopped
- Grated zest and juice of one lime
- Salt and freshly ground black pepper
- 1 tablespoon of chopped fresh mint or basil
For the tournedos - 6 tournedos of beef, trimmed of fat and neatly tied
- 40g butter
- 1 garlic clove, skinned and finely chopped
Method:- Start by making the salsa. Mix all the ingredients together and season generously.
- Leave for at least 30minutes to allow the flavours to marinate and develop.
- Next cook the tournedos. Season each of the tournedos on both sides with salt and pepper.
- Melt the butter in a large frying pan. Add the garlic and fry for 2 minutes before adding the seasoned tournedos.
- Fry the tournedos over a high heat, for about 3 minutes each side, turning just once.
- Serve the hot tournedos topped with a generous tablespoon of tomato salsa and vegetables or salad.
