Tomato Salsa Topped Tournedos
Tomato Salsa Topped Tournedos

Ingredients:

For the salsa
To obtain best results and to save time use a mini-chopper to prepare the ingredients

  • 6 ripe tomatoes, peeled and finely chopped
  • 2 shallots, peeled and finely chopped
  • Grated zest and juice of one lime
  • Salt and freshly ground black pepper
  • 1 tablespoon of chopped fresh mint or basil

For the tournedos

  • 6 tournedos of beef, trimmed of fat and neatly tied
  • 40g butter
  • 1 garlic clove, skinned and finely chopped

Method:
  1. Start by making the salsa. Mix all the ingredients together and season generously.
  2. Leave for at least 30minutes to allow the flavours to marinate and develop.
  3. Next cook the tournedos. Season each of the tournedos on both sides with salt and pepper.
  4. Melt the butter in a large frying pan. Add the garlic and fry for 2 minutes before adding the seasoned tournedos.
  5. Fry the tournedos over a high heat, for about 3 minutes each side, turning just once.
  6. Serve the hot tournedos topped with a generous tablespoon of tomato salsa and vegetables or salad.
