| Petit Pois & Bean Medley with Minted Butter |

Ingredients: - 1 tablespoon fresh mint, finely chopped
- A large pinch of nutmeg
- 50g butter, softened
- Salt and freshly ground black pepper
- 450g French beans, trimmed
- 450g frozen petit pois
To obtain best results and to save time, we recommend using mezzaluna to prepare the finely chopped herbs. Method: - Mix the mint and nutmeg into the softened butter and season with black pepper.
- Cook the beans in a large saucepan of salted water for about 6 minutes or until tender.
- Likewise cook the petit pois in a saucepan of salted water for about 3 minutes.
- Drain both the petit pois and beans and mix together in one of the pans.
- Add the flavoured butter and toss well together until the butter has melted and the vegetables are coated.
- Spoon into a warm serving dish and serve immediately.
Serves 8 Cooks Notes In place of mint, try using chopped tarragon. |
