Petit Pois & Bean Medley with Minted Butter

Ingredients:

  • 1 tablespoon fresh mint, finely chopped
  • A large pinch of nutmeg
  • 50g butter, softened
  • Salt and freshly ground black pepper
  • 450g French beans, trimmed
  • 450g frozen petit pois

To obtain best results and to save time, we recommend using mezzaluna to prepare the finely chopped herbs.

Method:

  1. Mix the mint and nutmeg into the softened butter and season with black pepper.
  2. Cook the beans in a large saucepan of salted water for about 6 minutes or until tender.
  3. Likewise cook the petit pois in a saucepan of salted water for about 3 minutes.
  4. Drain both the petit pois and beans and mix together in one of the pans.
  5. Add the flavoured butter and toss well together until the butter has melted and the vegetables are coated.
  6. Spoon into a warm serving dish and serve immediately.

Serves 8

Cooks Notes

In place of mint, try using chopped tarragon.
