Ham & Watercress Salad with Mustard and Honey Vinaigrette

Ingredients:

For the mustard Vinaigrette

  • 1 teaspoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons clear honey
  • Salt and freshly ground black pepper

For the salad

  • 1 red skinned apple
  • 2 tablespoons lemon juice
  • 125g fresh watercress
  • 2 sticks of celery, trimmed and sliced
  • 4 slices, off the bone ham, cut into quarters

Method:

  1. Start by making the vinaigrette. Place the mustard in a bowl with the vinegar, oil and honey.    
  2. Using a hand wand blender, blend until emulsified and season to taste.
  3. Now prepare the salad. Core the apple and cut into slices. Dip in the lemon juice to prevent discolouration.
  4. Place the watercress in a large salad bowl. Add the apple and celery slices and pour over as much vinaigrette as liked. Toss well together.
  5. Using a 10'' Ham Slicer Knife, trim the ham and arrange the slices on top of the dressed salad.

Serves 2 as a main course salad
