Ingredients: - 1 tablespoon olive oil
- 2 medium onions, finely chopped
- 1 red pepper, deseeded and finely chopped
- 2 cloves garlic, finely chopped
- 450g lean minced beef
- 225g pork sausagemeat
- 75g fresh bread crumbs
- 2 tablespoons fresh chopped parsley
- 3 tablespoons tomato puree
- Salt and freshly ground black pepper
- 2 eggs, beaten.
Method: Have ready a 900g loaf tin, greased and base lined with greaseproof paper. Pre-heat the oven to 190° C or gas mark 5. - Heat the oil in a frying pan; add the onion, red pepper and garlic and fry gently for about 10 minutes or until softened.
- Put the minced beef, sausagemeat, breadcrumbs, parsley and tomato puree in a food processor, add the onion mixture and mix well together.
- Season well with salt and pepper and stir in the beaten eggs to bind the ingredients together.
Press the mixture firmly into the loaf tin and bake for about 1½ hours. - Once cooked, remove the meat loaf from the tin and serve sliced with vegetables of your choice.
Serves 4-6
Cooks Note This meatloaf is also delicious served cold with salad and tomato or onion relish. |
