Savoury Meat Loaf
Savoury Meat Loaf

Ingredients:

  • 1 tablespoon olive oil
  • 2 medium onions, finely chopped
  • 1 red pepper, deseeded and finely chopped
  • 2 cloves garlic, finely chopped
  • 450g lean minced beef
  • 225g pork sausagemeat
  • 75g fresh bread crumbs
  • 2 tablespoons fresh chopped parsley
  • 3 tablespoons tomato puree
  • Salt and freshly ground black pepper
  • 2 eggs, beaten.

Method:

Have ready a 900g loaf tin, greased and base lined with greaseproof paper.
Pre-heat the oven to 190° C or gas mark 5.

  1. Heat the oil in a frying pan; add the onion, red pepper and garlic and fry gently for about 10 minutes or until softened.
  2. Put the minced beef, sausagemeat, breadcrumbs, parsley and tomato puree in a food processor, add the onion mixture and mix well together.
  3. Season well with salt and pepper and stir in the beaten eggs to bind the ingredients together.
    Press the mixture firmly into the loaf tin and bake for about 1½ hours.
  4. Once cooked, remove the meat loaf from the tin and serve sliced with vegetables of your choice.

Serves 4-6

 

Cooks Note
This meatloaf is also delicious served cold with salad and tomato or onion relish.
