| Grapefruit and Orange Salad. |

Ingredients: - 100g bag mixed salad leaves
- 1 pink grapefruit
- 2 oranges
- 50g cucumber, diced
- 1 red onion, peeled and thinly sliced. For best results use a 'V' Vegetable Slicer
- 25g sunflower seeds
Method: - Peel and carefully segment the grapefruit and the oranges, ensuring that any pith and pips are discarded.
- Put the salad leaves into a large bowl and add all the other ingredients.
- Toss well together ensuring that the juice from the citrus fruit coats all the ingredients.
Divide the salad between two serving dishes and serve immediately.
Serves 4
Cooks Note The only dressing on this salad is the citrus juice; hence the recipe is extremely low calorie. However a tablespoon of reduced fat French vinaigrette could also be drizzled over the salad if liked. |
