| Triple Chocolate Oaty Cookies |

Ingredients: - 100g dark chocolate
- 100g white chocolate
- 100g milk chocolate
- 125g butter, softened
- 125g light brown sugar
- 1 egg
- 1 teaspoon vanilla essence
- 100g porridge oats
- 150g plain flour
- 2.5ml spoon baking powder
Have ready 2 lightly greased baking sheets. Pre-heat oven to 180°C or gas mark 4. Method: - Roughly chop the three chocolates into small chunks,
- In a bowl, or using a food processor, cream the butter and sugar together until pale.
- Gradually whisk in the egg. The add the vanilla essence, oats, flour and baking powder and mix well together
- Add the chocolate pieces and stir.
- Place dessertspoons of the mixture on the baking sheets, spacing them well apart to allow for spreading.
- Bake for 12-15 minutes until slightly risen and golden brown.
- Leave to cool slightly before transferring to a wire rack to cool completely.
- Store in an air tight tin for up to 5 days
Makes approximately 18 cookies Flavour Variations- For cranberry and orange cookies substitute the three different chocolates for 200g chopped cranberries and the grated rind of 1 orange.
- For raisin oat cookies substitute the three different chocolates for 200g raisins and increase the porridge oats to 125g
