Triple Chocolate Oaty Cookies
Triple Chocolate Oaty Cookies

Ingredients:

  • 100g dark chocolate
  • 100g white chocolate
  • 100g milk chocolate
  • 125g butter, softened
  • 125g light brown sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 100g porridge oats
  • 150g plain flour
  • 2.5ml spoon baking powder

Have ready 2 lightly greased baking sheets.  Pre-heat oven to 180°C or gas mark 4.

Method:

  1. Roughly chop the three chocolates into small chunks,
  2. In a bowl, or using a food processor, cream the butter and sugar together until pale.
  3. Gradually whisk in the egg. The add the vanilla essence, oats, flour and baking powder and mix well together
  4. Add the chocolate pieces and stir.
  5. Place dessertspoons of the mixture on the baking sheets, spacing them well apart to allow for spreading.
  6. Bake for 12-15 minutes until slightly risen and golden brown.
  7. Leave to cool slightly before transferring to a wire rack to cool completely.
  8. Store in an air tight tin for up to 5 days

Makes approximately 18 cookies

Flavour Variations

  • For cranberry and orange cookies substitute the three different chocolates for 200g chopped cranberries and the grated rind of 1 orange.
  • For raisin oat cookies substitute the three different chocolates for 200g raisins and increase the porridge oats to 125g
