| Tomato, Basil and Mozzarella Salad |

Ingredients: - 500g cherry tomatoes
- 2 yellow peppers, deseeded and roughly chopped
- 250g mozzarella cheese, cut into cubes
- 2 tablespoon fresh basil leaves, chopped
- 50g toasted pine nuts [optional]
For the dressing: - 1 tablespoon green pesto
- 2 tablespoons balsamic vinegar
- 4 tablespoons olive oil
Salt and freshly ground black pepper
Method: - Cut the cherry tomatoes in half and place in a large bowl.
- Add the yellow pepper pieces, mozzarella cubes, chopped basil and the pine nuts if being used. Mix well.
- Place all the dressing ingredients in a screw topped jar and shake well. Pour the dressing over the cheese and vegetable mixture and stir well.
- Leave for about 30minutes to allow the flavours to mingle.
- Spoon into a serving dish and season to taste.
Serves 8-10 as a side salad |
