Tomato, Basil and Mozzarella Salad
Tomato, Basil and Mozzarella Salad

Ingredients:

  • 500g cherry tomatoes
  • 2 yellow peppers, deseeded and roughly chopped
  • 250g mozzarella cheese, cut into cubes
  • 2 tablespoon fresh basil leaves, chopped
  • 50g toasted pine nuts [optional]

For the dressing:

  • 1 tablespoon green pesto
  • 2 tablespoons balsamic vinegar
  • 4 tablespoons olive oil

Salt and freshly ground black pepper

Method:

  1. Cut the cherry tomatoes in half and place in a large bowl.
  2. Add the yellow pepper pieces, mozzarella cubes, chopped basil and the pine nuts if being used. Mix well.
  3. Place all the dressing ingredients in a screw topped jar and shake well. Pour the dressing over the cheese and vegetable mixture and stir well.
  4. Leave for about 30minutes to allow the flavours to mingle.
  5. Spoon into a serving dish and season to taste.

Serves 8-10 as a side salad
