| Crispy Bacon and Peach Salad |

Ingredients: - 225g rindless streaky bacon, cut into pieces
- 4 ripe peaches
- 150g mixed salad leaves
- 100ml natural yogurt
- 2 tablespoon finely grated parmesan cheese
- 1 garlic clove, skinned and crushed
- Salt and freshly ground black pepper
Method: - Place the bacon in a frying pan and fry until crispy. Set to one side and allow to cool
Peel the peaches and discard the stones. Cut each peach half into 4 segments. - Stir the crushed garlic and Parmesan cheese into the yogurt. Season to taste.
Arrange the salad leaves on a serving plate. Top with the peach slices then sprinkle with the crispy bacon pieces. - Just before serving drizzle the yogurt dressing over the salad. If liked serve with slices of garlic bread.
