| King Prawn and Mango with Sweet Chilli Dip |

Ingredients: - 100g soft brown sugar
- 100ml water
- 25g chilli flakes
- 1 ripe mango
- A few mixed salad leaves
- 12-16 cooked king prawns, peeled
Method: - Prepare the dip. Place the sugar and water into a small saucepan and heat gently until the sugar has dissolved then bring to the boil.
- Add the chilli flakes, reduce the heat and simmer uncovered for about 30 minutes or until the dip becomes syrupy. Leave to cool then pour into a small serving bowl.
- Meanwhile prepare the mango. Cut a large slice from one side of the fruit cutting as close to the stone as possible. Cut another slice from the opposite side. Cut the flesh into large cubes by cutting lengthways and crossways without breaking the skin. Then push the skin inside out to expose the cubed flesh. Peel the remaining centre section and cut the flesh away from the stone in chunks.
- Arrange the salad leaves, mango chunks and king prawns on a platter together with the dipping sauce.
