| Greek Platter with Tzaziki |

Ingredients: For the Tzaziki - Half a cucumber diced
- 150ml thick set Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon fresh chopped mint
- 1 garlic clove, skinned and crushed
- Salt and freshly ground black pepper to taste
For the Platter - 2 beefsteak tomatoes cut in to eighths
- Half a cucumber cut into thick slices
- 50g black olives marinated in garlic
- 150g Feta cheese, diced
- 6-8 stuffed vine leaves
- 100g shredded lettuce
- Lemon slices to garnish
Method: - Start by making the Tzaziki. Place the cucumber in a bowl. Add all the Tzaziki ingredients and stir well.
- Spoon into one or two ramekin type serving dishes and chill for at least 2 hours to allow the flavours to develop.
- When almost ready to serve prepare the Greek platter. Sprinkle the base of a large serving platter with the shredded lettuce.
- Arrange all the other items attractively on the dish, placing the Tzaziki in the middle. Garnish with lemon slices. Delicious served with warm pitta bread.
