Greek Platter with Tzaziki
Greek Platter with Tzaziki

Ingredients:

For the Tzaziki

  • Half a cucumber diced
  • 150ml thick set Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon fresh chopped mint
  • 1 garlic clove, skinned and crushed
  • Salt and freshly ground black pepper to taste

For the Platter

  • 2 beefsteak tomatoes cut in to eighths
  • Half a cucumber cut into thick slices
  • 50g black olives marinated in garlic
  • 150g Feta cheese, diced
  • 6-8 stuffed vine leaves
  • 100g shredded lettuce
  • Lemon slices to garnish

Method:

  1. Start by making the Tzaziki. Place the cucumber in a bowl. Add all the Tzaziki ingredients and stir well.
  2. Spoon into one or two ramekin type serving dishes and chill for at least 2 hours to allow the flavours to develop.
  3. When almost ready to serve prepare the Greek platter. Sprinkle the base of a large serving platter with the shredded lettuce.
  4. Arrange all the other items attractively on the dish, placing the Tzaziki in the middle. Garnish with lemon slices. Delicious served with warm pitta bread.

    Serves 4
