Blackberry and Apple Crumble
Blackberry and Apple Crumble

Ingredients:

  • 75g butter
  • 125g plain flour
  • 150g light soft brown sugar
  • 1 teaspoon ground cinnamon
  • 450g cooking apples, peeled, cored and quartered
  • 450g fresh or frozen blackberries, defrosted
  • 3 tablespoons apple juice or water
  • 150g sugar
  • A little Demerara sugar


Method:

Have ready a 1.1 litre pie dish. Pre-heat the oven to 200°C or gas mark 6.

  1. Rub the butter into the flour until the mixture resembles breadcrumbs then stir in the brown sugar and the ground cinnamon.
  2. Cut the apple quarters into thick slices and place in a saucepan, together with the blackberries and the apple juice or water.
  3. Heat gently for about 5-6 minutes to allow the apple to soften and the fruit juices to run.
  4. Remove from the heat and stir in the sugar. Spoon the fruit into the pie dish.
  5. Sprinkle the crumble mixture on top of the fruit, lightly pressing it down. Sprinkle with a little Demerara sugar.
  6. Bake for 30-35 minutes until the crumble is golden and the fruit cooked.

Serves 6
