Sunrise Breakfast Parfait.

Ingredients:

  • 100g fresh blueberries
  • 2 clementines, peeled and segmented
  • 1 tablespoon runny honey
  • 50g oat crunch style breakfast cereal
  • 2 teaspoons soft brown sugar
  • 100ml Greek style yogurt


Method:

Have ready two tall serving glasses.

  1. Mix together the blueberries and clementine segments with the honey.
  2. Mix together the cereal and the brown sugar.
  3. In the serving glasses, place a layer of fruit mixture, then a layer of yogurt, then a layer of the sweetened muesli. Repeat this layering again, finishing with a topping of cereal.

Serves 2

Cooks Note
If liked, the parfaits can be flashed under a hot grill just before serving to make the topping even crunchier.
