Have ready 2 12-hole mini muffin tins lined with mini muffin paper cases.
Pre-heat the oven to 180 degrees C or gas mark 4.
- Place the flour in a large mixing bowl or food processor and stir in the cinnamon and brown sugar.
- Add the sultanas, grated apple and most of the nuts, reserving a few to sprinkle on top of the muffins.
- Mix the eggs and oil together and pour on to the dry ingredients. Mix well.
- Spoon the mixture into the muffin cases, filling about two thirds full.
- Sprinkle the top of each muffin with a few of the reserved pecan pieces and bake for 20-25 minutes or until well risen and golden. Cool on a wire rack.
Makes approximately 24 muffins
Alternative Flavourings
For Passion Cake Mini Muffins, substitute the grated apple for grated carrot and replace the pecan nuts with walnuts.
For Banana and Chocolate Chip Mini Muffins, substitute the grated apple for 2 small bananas, well mashed. Omit the sultanas and reduce the cinnamon to one teaspoon. Finally substitute the pecan nuts with chocolate chips.
